SYNOPSIS

In a Quebec where even artisanal butcher shops rely on industrial meat, Renée LeBlanc-Paulin makes a radical choice: to work exclusively with whole local carcasses, which she and her team break down every week in her butcher shop in Trois-Pistoles. Around her, a network of committed women — a chef, a livestock farmer, a slaughterhouse manager, an institutional cook — helps keep alive a supply chain as fragile as it is necessary.
